Kali Orexi

I haven't posted in awhile, and it's not because I haven't been in the kitchen. I am always in the kitchen, it's my favorite room in the house! Well, almost my favorite.  ; ) But let's not go there, it's not that kind of a blog!
 Don't you just love it when someone walks into your house and they get whiffs, and subtle scents of foods that you've been preparing? I love to hear someone say,"OMG! It smells so good in here" or " OMG! I can't wait to taste that!"
Tonight is going to be one of those nights! So Kali Orexi, which in Greek means Hearty Appetite! Tonight we're cooking Island Shrimp, better known by my family as Garides Me Feta.

For this dish you will need the following ingredients:

2 pounds of Large Shrimp
 fresh juice of 1 lemon
 olive oil, enough to coat the bottom of you pan, 2 - 3 tbs
1 - 2 stalks of celery, minced
 chopped parsley, fresh about 1/2 cup
5 - 6 scallions, chopped with the greens
3 - 4  cloves garlic, crushed
1 large can of crushed plum tomatoes
salt and pepper to taste
1/2 cup seafood stock or clam juice (I've used chicken stock in a jam)
1/2 cup dry white wine
pinch of oregano
1 cup Feta Cheese

Wash and clean the shrimp, remove shells and devein if necessary. Butterfly the shrimp, taking care not to cut all the way through. Place the shrimp in a bowl with the lemon juice and sprinkle with the oregano and set aside.
Heat the oil in a skillet and saute the scallions, celery. parsley, and garlic until the scallions are tender. Stir in tomatoes and bring to a boil. Reduce heat and simmer for 5 - 10 minutes. season with salt and pepper. pour in fish stock and wine and cook for another 5 minutes.  Add the shrimp to the skillet and let them cook until they just start to turn pink. Don't over cook, shrimp cook fast.





Spoon the shrimp with the sauce into an oven proof casserole. Sprinkle with Feta cheese. Bake in a preheated 400 degree oven for 10 - 15 minutes or until the shrimp are cooked and the cheese has melted.  Serve this with some rice, or better yet over some orzo and a nice green salad. It's simple, easy and so delicious! I've got to get this in the oven! Bon Appetite! Kali Orexi!  or in any language you want to say it!  Enjoy!!!
